Chena Hot Springs offers a wide variety of wintertime activities.  Be sure to check out dogsledding while you're there- you'll never want to drive a car again!  Stop in the activity center to sign up- I think it was about $60/person for a half hour run.  The activity center can also hook you up with anything else you wanted to try.
Chena Hot Springs is a great place to check out year-round, however, i think it is particularly beautiful to go to in the winter. In fact, the colder the better! A dip in the 106 degree(ish) water takes the bite away from -40 temperatures in the most luxurious and enjoyable way possible. $15 gets you an all-day pass so you can enjoy them on your schedule and make a most of everything else the resort has to offer, such as snowshooeing and mobiling, dogsledding, the ice museum (and bar!) and aurora watching.  There's nothing better than relaxing in its mineral-rich waters among snowy trees and rocks watching the steam curl off the water. I love, love, love this place!

The Aurora Ice Bar is one of Chena Hot Springs awesome attractions. Its located inside their pretty impressive ice museum. $15 gets you a tour of the museum and another $15 gets you their signature (and very strong) appletini. You can sip it from a fur covered stool at the bar. Everything, including the glass you can keep (which is traditionally smashed on the ground outside the museum) is made of ice.
