Soba (buckwheat noodles) is a beloved traditional Japanese dish and a well-balanced superfood. Packed with high-quality protein, vitamins, minerals, dietary fibre, and rutin (a type of polyphenol), it is as incredibly healthy as it is delicious.
A Rare Hands-On Experience
In this special class, you will make “Juwari Soba” (100% pure buckwheat noodles) using premium buckwheat flour carefully sourced from Kyoto and Hokkaido. Crafting 100% buckwheat soba from scratch is a rare and highly valued experience, even here in Japan!
I will guide you step-by-step through the traditional techniques of kneading, rolling, and cutting your own noodles. Even complete beginners can enjoy the process with confidence.
Taste the Reward
There is nothing quite like the taste of freshly made, freshly boiled soba that you crafted with your own hands—it is truly the best! We will pair your handmade noodles with our exceptional homemade mentsuyu (dipping sauce), which is prepared daily from scratch using freshly shaved bonito flakes.
You can enjoy your freshly boiled soba in multiple ways: served chilled zaru-style for a clean, refreshing taste, or as hot kake-soba in a delicate, savoury broth.
