Step into a restaurant in Matsuyama that reflects everyday Japanese dining culture rather than a formal sushi counter. Meet your guide and get an introduction to the session, learning what the next 90 minutes will involve before the hands-on work begins.

Watch as your guide demonstrates nigiri technique directly in front of you, showing how to shape and press rice, handle fish, and form each piece. Then, follow along, shaping nigiri yourself under your guide’s instruction.

As the session progresses, work through the core steps at your own pace, with your guide explaining the techniques in English and answering your questions during the Q&A portion.

By the end of the session, shape a set of nigiri pieces using the techniques shown by your guide. Sit down to eat what you have made, finishing the experience with a direct result of your own work.
