Arrive at a casual sushi restaurant in Kurashiki’s Bikan Historical Quarter. From the moment you walk in, the setting is relaxed and welcoming, with a guide on hand to introduce the session and help bridge any language gap. Watch as your guide demonstrates nigiri technique step by step — how to portion and shape the rice, how to handle the fish, and how to press each piece into form. Then, replicate each step yourself, working through the motions with your guide’s guidance close at hand.

Your guide explains the techniques and answers your questions, so when you want to ask about technique, fish selection, or anything else, the conversation flows naturally. By the end of the session, shape your own nigiri pieces and sit down to eat what you have made.

The 90 minutes closes with a meal that is entirely your own work — rice pressed by your hands, fish laid by your fingers, and a clearer understanding of what goes into each piece of sushi served across Japan.
